When the sun is shining and you’re not sure what to eat, there’s something about a fish dish that feels lighter and more summery than other options. High in protein and packed with healthy omega-3 fats, there are plenty of good reasons to add more salmon into your weekly menu.
The flaky pink fish can be eaten smoked, grilled, roasted or pan-fried, with a wide range of tasty accompaniments. To prove just how versatile it is, and to inspire you to try some new recipes this season, we’re rounded up a few of our favourite salmon recipes for summer.

Spicy Salmon Skewers with Couscous

You’ll need to pick up some wooden skewers for this recipe. You should be able to find them in your usual supermarket, although you can also order a large pack online like this one from Amazon. Remember to soak them well before putting them in the oven, to avoid them burning.
Chilli and Lime Baked Salmon
When it’s warm out, the last thing you want is to have the oven on for hours and hours. Luckily, this Chilli and Lime Baked Salmon is roasted to perfection in just 15 minutes. The salmon and peppers all go in together on one baking tray, so there’s minimal fuss and less washing up afterwards (which means more time sitting out in the sunshine!).

If you fancy a change from beef or chicken, you won’t regret making a batch of these Salmon Burgers. They’re smothered in our homemade twist on tartare sauce, made from fat-free Greek yoghurt with dill and finely chopped gherkins.
Even though you’ll be making the patties from scratch, you’ll be pleased to know this recipe is nice and quick to make. The salmon burgers cook in just 10 minutes, then they’re ready to load onto the bread roll with crisp lettuce and that all-important creamy sauce.
