Breakfasts for Bacon Lovers
These Bacon and Maple Blueberry Pancakes are bound to become an instant hit at breakfast time. Bacon medallions usually come with around 30% less fat than full-fat bacon rashers, so we’ve used them to lower the calories in our crispy maple-infused topping.
There’s no flour in sight here! We’ve used Ready Brek oats because we love the light, fluffy texture they give to our stack of pancakes, but you can use any oats you have handy in your store cupboard – just be sure to blend them nice and fine first!
A notoriously tasty combo you’d be sure to find on an American diner menu, the sweetness of syrup with savoury bacon is to die for. Don’t knock it until you’ve tried it…
When it comes to pastry-based treats, we love cutting a few calories using our trusty low-calorie tortilla wrap ‘pastry’ hack. For our Bacon and Cheese Turnovers, we’ve recreated all the satisfaction of eating a bakery-bought puff pastry parcel, for only 114 calories a pop.
We bake our turnovers in the oven with a moreish bacon medallion and reduced-fat cheddar filling until they’re golden and crisp.
Just as good hot or cold, they’re a batch cook’s dream! Keep them in the fridge or freezer ready to go in your picnic basket.
Speaking of light breakfasts, have you tried our tupperware-friendly Breakfast Muffins? These eggy little bites are the perfect size to munch on first thing in the morning or throughout the day as a nutritious snack.
We’ve thrown grated courgette, mushrooms, red onion, spinach and all-important bacon bits into ours, but there’s nothing to stop you trying new fillings. Inspired by our hugely popular Chicken Bacon and Leek Cottage Pie, our Chicken Bacon and Leek Crustless Quiche comes jam-packed with deliciousness for far fewer calories than a shop-bought version. Bake your meat, veggies and cheesy egg mixture in the oven until it’s fluffy-in-the-middle with a golden brown crown.
If you’re using a dish that’s smaller than 24cm, make sure you blitz the cottage cheese thoroughly to avoid a lumpy quiche. This dish from Amazon is the ideal size!
Served hot or cold, we love this crustless, cheesy dream with a fresh, crisp side salad.
It wouldn’t be right to talk about bacon without mentioning the mother of all bacon brunches: The BLT Sandwich. You’ll find bacon, lettuce, tomato and mayonnaise in our recipe, with the added bonus of sunny fried eggs.
When we’re feeling fancy, we toast ours to give our bread a posher ‘club sandwich’ feel. Not bad for 440 calories – ketchup and mayo included!
A comfort food warmer with a bacon-topped crunch, our Cauliflower Cheese Soup is one of our go-tos for chillier days. It’s filled with so many sneaky, nutritious veggies, you’ll be edging closer to your five-a-day with every spoonful. It’s hard to believe a recipe this silky and rich could be so low in calories, and yet every bowlful comes to just 210. What a winner!

A nostalgic dinner you can count on time and time again, we don’t need telling twice to pop our homely Bacon and Onion Potato Bake in the oven. Using only 5 ingredients (not including salt, pepper and low-calorie cooking spray), you can have this bacon-layered bake ready to impress for only 415 calories.
A fine grater will make preparing your cheesy topping even easier.
This recipe will work a treat with any potatoes you have spare, but we’d recommend King Edwards or Maris Piper as they really soak up the best of the bacon-y, cheesy flavours.

To save time when you’ve got a hankering for smoky, Cajun-like aromas, pre-made seasoning mixes are usually packed with all the spices you’re after, and budget-friendly too. Schwartz Cajun Seasoning is a staple on our spice rack, but any version that suits you will work deliciously well!
