It’s been a good few months now since we launched our Pinch of Nom Gallery, and WOW have we been blown away by your wonderful creations! Our gallery is a space for website members to share photos of what they’ve been cooking up, alongside any handy hints and tips they’ve picked up along the way. Nothing makes our hearts happier than scrolling through your submissions, which is why we’ve always got SWAG up for grabs.
When we’re not sure what we fancy cooking, the gallery is our go-to – from brilliant breakfasts to midweek meals, there’s no shortage of drool-worthy inspo courtesy of the incredible Pinch of Nom community.
All you have to do to share your pictures is create a FREE website account here. Did we mention we might send you some SWAG to say thank you?
To show some love for our gallery, we thought we’d gather up the recipes we’ve noticed you’re absolutely loving making lately.
Popular gallery breakfasts
It’s no surprise that our punchy Marmite Mushrooms on Toast recipe appears time and time again in our gallery. Creamy, rich and oh-so-satisfying, it’s a surefire way to start your day with a bang. The savoury Marmite flavours work so well in the hearty mushroom and cream cheese topping. You need to try it finished with a sprinkling of chives and a cuppa on the side, just like Amy from Wales. We’re loving the additional pineapple chunks and orange juice in the sunshine – we like your style, Amy!
A warming, cosy breakfast bake, it’s tough to find a sweeter deal than our Nutella Baked Oats. Just like Andria from Kent, it’s one of our favourite reasons to open our fourth cookbook, Pinch of Nom: Comfort Food. You might not expect a Nutella-filled brekkie to be slimming friendly, and yet our indulgent, fluffy oats come in at 546 per batch. What a treat!
If you’re feeling rushed in the morning, the easy convenience of our oven-baked Breakfast Bakes is a dream. Prepare your batch the night before (minus the egg) and store it in the fridge until you’re ready as a time-saving hack.
We add mushrooms when we put this one together, but there’s nothing to stop you having some fun with fillings! Try them with a handful of cherry tomatoes or spinach – our Gallery community says they both taste great.
Just look at the bubbling, golden cheese topping Mrs D from Easington Village has served up here – we’re so jealous!
Popular gallery midweek meals
For busier evenings, midweek meals that are simple and fuss-free are a lifesaver. Our Cheesy Fajita Orzotto is a winner on all fronts – it’s quick and easy to make, packed full of cheesy goodness and a one-pot wonder that leaves hardly any washing-up after.
We’re obsessed with how good Leigh from Shropshire’s Mexican-inspired night looks. An impressive showstopper at the centre of any table, our Mexican Corn on the Cob on the side is a delightful touch. Who else would love to go to Leigh’s for dinner?
It’s no secret by now that we love a creamy chicken dish, and it’s such a treat to see rich, cream cheese wonders like our Creamy Garlic Chicken pop up in the gallery. A versatile batch cook’s dream, we can promise that this tender chicken in a silky, garlicky sauce tastes just as good whether you serve it with chips, pasta, veggies or rice.
Finish with a sprinkling of paprika like Lesley from Hampshire has here for maximum deliciousness…
Dinnertimes don’t come much easier than our Sausage Traybake. A great way to give stray veggies a new lease of life, we can guarantee near enough anything tastes delicious oven-baked and coated in our sweet mustard glaze (just be sure to adjust the calories accordingly, if you’re counting!).
Like Sharon from Somerset has, lay out your onions, carrots, potatoes and sausages evenly so that everything has a fair chance to bake until crisp and golden brown. Easy peasy!
Why choose between pizza and pasta when you can have both? Our Pizza Pasta isn’t just the best of both worlds, it’s Everyday Light at just 390 calories per serving too. Combining the classic flavours of a pepperoni pizza, topped with golden cheese and baked in the oven until crisp, it’s no wonder this one’s a hit in our gallery.
Fiona from Airdrie’s bake makes us wish we were having it for dinner tonight! You can find the full recipe in our third cookbook, Pinch of Nom: Quick and Easy. If it’s not on your shelf yet, there’s no time like the present to grab a copy here.
Popular gallery Fakeaways
Whether you prefer a Chinese-style Fakeaway dish with rice or chips, our Kung Pao Pork is the perfect main event. We’re not surprised so many of you have been rustling this one up – our veg-filled homemade sauce is to die for! To keep the calories low, we’ve baked our pork pieces instead of frying them. Jacqui in Lancashire hasn’t been shy with the spring onion topping on her serving and we don’t blame her – they add such a moreish, onion-y crunch!
Served in an irresistible homemade sticky sauce, our Sweet and Spicy Meatballs have all the Friday night restaurant-quality flavours you could ever want (for far fewer calories). We’ve kept this one mildly-spiced so the whole family can enjoy a portion with their desired accompaniment (we’d go for fluffy basmati rice or Creamy Mashed Potatoes!).
Shannen in Bristol has served hers up with noodles and crunchy-looking green beans – we wish we could grab a fork and try them right now…
Ready in under an hour for 191 calories per plateful, our Oven Baked Pasanda Curry is the definition of a fuss-free Fakeaway. Putting a Pinch of Nom twist on a classic takeaway order, it really is as easy as popping your ingredients in an ovenproof dish and leaving the oven to work its magic. We love to sprinkle a handful of almonds over the top to give every creamy bite a nutty, crunchy finish.
Fresh, leafy coriander is the perfect topping for our pasanda – that’s why Helen in Cheltenham’s added a helping to top her yummy-looking portion.
Described as ‘BBQ heaven’ in the gallery, our Chicken Tandoori Kebabs are a punchy, flavour-loaded addition to any dinnertime spread. We’ve kept the calories nice and low by preparing a homemade spice mix and leaving our chicken pieces to soak up the flavours before cooking – the longer they marinate, the stronger the spices will be!
Popular gallery sweet treats
From sponge cakes to puff pastry swirls, we love seeing you baking up a storm in the gallery. A sweet, fruity treat, every coconut-drizzled square of our Coconut and Jam Sponge is made with half sweetener, half sugar to keep the calories down without compromising on nostalgic comfort.
These delicately-rolled Cinnamon Swirls shared by Charlotte from South Wales look so good, they make us want to put the kettle on. Quick and easy to make, with only 5 ingredients in total, you can enjoy them as a light snack or make them into an autumnal pudding with a scoop of low-calorie ice cream.
We’ve loaded ours with cinnamon, but there’s nothing to stop you playing around with nutmeg, ginger or other mixed spices.
We’ve got two words: Biscoff Cheesecake. One of our most popular recipes ever, it’s no surprise that Biscoff Cheesecake is all over our gallery. If you’re as obsessed with Biscoff as we are, you need to give this show-stopping dessert a whirl.
Whether you’re looking to impress at a special occasion or just baking up a treat for family and friends, no one will ever be able to tell it’s slimming friendly (that’s our idea of Biscoff heaven!).
We’d love to pop to Manchester to try Bunmi’s Biscoff Cheesecake. That crumbly biscuit topping looks too good to be true.
Are you drooling over our gallery as much as we are?
No doubt our tasty gallery submissions have left you feeling inspired. We’d love to see which of our popular gallery recipes you’ll be making over in our Facebook group – it’s the place to be for a friendly chat, recipe ideas and slimming motivation.
Don’t forget to share your snaps in our Pinch of Nom Gallery too. We’re always on the lookout for extra-delicious submissions to receive Pinch of Nom Swag. Shh! Don’t tell anyone but we’re way more likely to send SWAG to members who leave hints and tips.
